Ingredients

The filling

  • 2 pounds ground pork
  • 1 small Napa cabbage
  • 2 medium carrots
  • ¼ pound shiitake mushrooms
  • 3 scallions
  • 2 medium shallots
  • 4 cloves garlic
  • 1 tablespoon ginger

The cooking ingredients

  • 1 tablespoon ghee or avocado oil
  • 2 tablespoons coconut aminos
  • 2 teaspoons rice vinegar
  • 1 teaspoon Red Boat fish sauce
  • 2 teaspoons toasted sesame oil
  • to taste Diamond Crystal kosher salt

Instructions

  1. Melt ghee in a skillet over medium heat.
  2. Add carrots, shallots, and mushrooms, and sauté until soft.
  3. Stir in garlic and ginger until fragrant.
  4. Add ground pork and break it up while cooking until no longer pink.
  5. Remove pork and leave cooking liquid in the pan.
  6. Add Napa cabbage and sauté until wilted.
  7. Return pork to the skillet and stir to combine.
  8. Season with coconut aminos, rice vinegar, and fish sauce, adjusting to taste.
  9. Finish with sesame oil and scallions, then serve.
