Ingredients

The Base

  • 2 tablespoons sesame oil
  • 6 pieces green onions, sliced (green and white parts divided)
  • ½ cup red onion, diced
  • 5 cloves garlic, minced
  • 1 pound ground pork
  • 1 teaspoon freshly grated ginger
  • 1 8-ounce can water chestnuts, chopped
  • 1 tablespoon sriracha or hot sauce
  • 1 14-ounce bag coleslaw mix
  • 2 tablespoons coconut aminos
  • 1 tablespoon rice wine vinegar
  • ⅛-¼ teaspoon white or black pepper
  • ½ teaspoon salt

For the Fried Eggs

  • 5 pieces eggs
  • 1 tablespoon ghee

For the Garnish

  • to taste black sesame seeds
  • green parts only from above green onions

For the Creamy Chili Sauce

  • ¼ cup mayonnaise
  • 1-2 tablespoons sriracha or hot sauce
  • to taste salt

Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Sauté the white parts of green onions, red onion, and garlic until softened.
  3. Add ground pork, ginger, water chestnuts, and sriracha; cook until pork is done.
  4. Stir in coleslaw mix, coconut aminos, vinegar, pepper, and salt; cook until cabbage is tender.
  5. In a small bowl, whisk together mayonnaise and hot sauce for the creamy chili sauce.
  6. Melt ghee in a non-stick skillet and fry the eggs to your preferred doneness.
  7. Divide the egg roll mixture into meal prep containers, top each with a fried egg, and garnish.
