Instructions
- Heat a skillet on medium-high heat and cook garlic and onions for 2-3 minutes.
- Add the peppers to the skillet and cook for 1-2 minutes.
- Stir in black beans, corn, tomatoes, and cheese, and cook for 2-3 minutes.
- Drizzle lime juice, add cilantro and taco seasoning, and stir.
- Prepare egg roll wrappers by wetting the edges with water.
- Load the mixture into each wrapper, fold and seal them securely.
- Spray the egg rolls with cooking oil and place them in the air fryer basket.
- Cook at 380 degrees for 8 minutes, flip, and cook for an additional 4 minutes.
- For the dipping sauce, mash avocado and mix with sour cream and ranch seasoning.
