Easy Air Fryer Southwestern Egg Rolls

Ingredients

The filling

  • ¼ cup red onion, chopped
  • 2-3 cloves garlic, chopped
  • 16 pieces egg roll wrappers
  • ½ cup red pepper, chopped
  • ½ cup yellow pepper, chopped
  • ½ cup orange pepper, chopped
  • ¼ cup shredded cheese (sharp cheddar)
  • 8 oz low-sodium black beans, drained
  • 1 can diced tomatoes and chilis, drained
  • 1 cup frozen kernel corn
  • 2 teaspoons cilantro, chopped
  • ½ lime juice of
  • ¼ packet Taco Seasoning
  • to taste cooking oil
  • cup of water

The dipping sauce

  • 8 oz sour cream
  • 1 piece avocado
  • ½ packet Hidden Valley Ranch Dip Seasoning

Instructions

  1. Heat a skillet on medium-high heat and cook garlic and onions for 2-3 minutes.
  2. Add the peppers to the skillet and cook for 1-2 minutes.
  3. Stir in black beans, corn, tomatoes, and cheese, and cook for 2-3 minutes.
  4. Drizzle lime juice, add cilantro and taco seasoning, and stir.
  5. Prepare egg roll wrappers by wetting the edges with water.
  6. Load the mixture into each wrapper, fold and seal them securely.
  7. Spray the egg rolls with cooking oil and place them in the air fryer basket.
  8. Cook at 380 degrees for 8 minutes, flip, and cook for an additional 4 minutes.
  9. For the dipping sauce, mash avocado and mix with sour cream and ranch seasoning.
