Old Fashioned Egg Custard Pie

Ingredients

Sweet Pastry Dough

  • 1 cup all-purpose flour
  • 3 tablespoons granulated sugar
  • ¼ teaspoon baking powder
  • ¼ teaspoon table salt
  • 4 tablespoons unsalted butter
  • 1 large egg
  • 1 large egg white

Custard

  • 5 large eggs
  • 1 large egg yolk
  • ¾ cup granulated sugar
  • ¼ teaspoon table salt
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream
  • cups whole milk
  • ¼ teaspoon ground nutmeg

Instructions

  1. Combine flour, sugar, baking powder, and salt in a food processor and pulse to mix.
  2. Add cold butter pieces and pulse until mixed in.
  3. Add the egg and pulse until the dough forms a ball.
  4. Turn out the dough onto a floured surface, flatten into a disc, wrap in plastic, and chill for 15-20 minutes.
  5. Roll out the dough into a circle larger than the pie pan and transfer it to the pan.
  6. Preheat the oven to 375°F.
  7. Brush the crust with beaten egg white and par-bake for 7-8 minutes.
  8. Cool the crust for 10 minutes.
  9. In a large bowl, whisk together eggs, egg yolk, sugar, salt, vanilla, heavy cream, and milk until smooth.
  10. Pour the custard mixture into the par-baked crust and sprinkle with nutmeg.
  11. Bake for 35-45 minutes until set.
  12. Cool the pie on a wire rack, then refrigerate for at least 4 hours before serving.
