Old Fashioned Egg Custard Pie

Instructions
- Combine flour, sugar, baking powder, and salt in a food processor and pulse to mix.
- Add cold butter pieces and pulse until mixed in.
- Add the egg and pulse until the dough forms a ball.
- Turn out the dough onto a floured surface, flatten into a disc, wrap in plastic, and chill for 15-20 minutes.
- Roll out the dough into a circle larger than the pie pan and transfer it to the pan.
- Preheat the oven to 375°F.
- Brush the crust with beaten egg white and par-bake for 7-8 minutes.
- Cool the crust for 10 minutes.
- In a large bowl, whisk together eggs, egg yolk, sugar, salt, vanilla, heavy cream, and milk until smooth.
- Pour the custard mixture into the par-baked crust and sprinkle with nutmeg.
- Bake for 35-45 minutes until set.
- Cool the pie on a wire rack, then refrigerate for at least 4 hours before serving.
