Ingredients

The crust

  • 2 crusts homemade pie crust
  • 1 large egg
  • 1 Tablespoon milk
  • optional coarse sugar for sprinkling

The filling

  • ½ cup granulated sugar
  • cup cornstarch
  • 1 cup blueberries
  • 1 cup blackberries
  • 2 cups chopped strawberries
  • 2 cups halved dark sweet cherries
  • 2 teaspoons lemon juice
  • ½ teaspoon almond extract

Instructions

  1. Prepare the pie crust according to the recipe up to step 5.
  2. Mix granulated sugar and cornstarch in a small bowl.
  3. Combine blueberries and blackberries in a medium bowl, and strawberries and cherries in a large bowl.
  4. Add part of the cornstarch mixture to each fruit mixture, along with lemon juice and almond extract, then refrigerate.
  5. Preheat the oven to 400°F (204°C).
  6. Roll out one disc of chilled dough and place it in a pie dish, tucking it in smoothly.
  7. Use aluminum foil to divide the filling sections in the crust.
  8. Spoon the strawberry filling into the larger section and blueberry filling into the smaller section, discarding excess liquid.
  9. Roll out the second disc of dough and cut it into strips and stars for decoration.
  10. Remove the foil and add the top decorations to create the American flag design.
  11. Brush the crust with egg wash and sprinkle with coarse sugar if desired.
  12. Bake the pie for 20 minutes at 400°F, then lower the temperature to 350°F (177°C) and bake for an additional 30-35 minutes.
  13. Cool the pie for 3 hours at room temperature before serving.
