Peach Bourbon Pie

Ingredients

The filling

  • 5 cups thinly sliced peaches
  • ½ cup white sugar
  • ½ cup brown sugar
  • ½ cup flour
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • pinch nutmeg
  • 2 tsp lemon zest
  • 1 tsp lemon juice
  • ¼ cup bourbon
  • 1 Tbsp butter

The crust

  • 1 recipe chilled double pie crust (unbaked)
  • milk for brushing
  • sugar for sprinkling

Instructions

  1. Whisk together flour, white sugar, brown sugar, cinnamon, nutmeg, salt, and lemon zest in a large bowl.
  2. Add the peaches and toss to combine, then add lemon juice and bourbon, tossing until coated.
  3. Roll out the bottom pie crust and place it in a pie pan, then pour in the peach filling and smooth the top.
  4. Cut butter into small pieces and sprinkle over the peaches.
  5. Roll out the second half of the dough for the top crust, place it over the pie, and pinch the edges together.
  6. Brush the top crust with milk and sprinkle with sugar, then cut slits for ventilation.
  7. Bake at 400°F for 30 minutes, then reduce the heat to 350°F and bake for an additional 25-30 minutes until golden brown.
