Ingredients

Spicy Almond Dressing

  • ½ cup sliced almonds, soaked for 1 hour and drained
  • 2 cloves garlic, peeled
  • 1 tablespoon nutritional yeast
  • ¼ cup water
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon Tamari
  • 1 teaspoon maple syrup
  • 1 teaspoon Dijon mustard
  • 1-2 teaspoons hot sauce of choice, or to taste
  • to taste sea salt and ground black pepper

Kale Power Salad

  • 2 teaspoons nutritional yeast
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons onion powder
  • 1 ½ teaspoons sweet paprika
  • 1 ½ teaspoons chili powder
  • 2 medium sweet potatoes, peeled and diced into 2-inch pieces
  • 350 grams firm or extra firm tofu, drained and torn into little pieces
  • 4 tablespoons olive oil, divided
  • to taste sea salt and ground black pepper
  • 2 tablespoons arrowroot powder
  • 2 tablespoons cornmeal
  • 6 cups chopped kale, lightly packed
  • 1 tablespoon lime juice
  • 1 teaspoon maple syrup
  • 1 ripe avocado, peeled, pitted and chopped
  • 1 small red onion, sliced thin
  • ¼ cup toasted sliced almonds

Instructions

  1. Preheat the oven to 425°F and line a large baking sheet with parchment paper.
  2. Blend the spicy almond dressing ingredients until smooth and creamy, adjusting consistency with water as needed.
  3. Mix the spice blend in a small bowl and divide it between two bowls for sweet potatoes and tofu.
  4. Blot moisture from the tofu and coat both sweet potatoes and tofu with olive oil, salt, pepper, and the spice blend.
  5. Spread sweet potatoes and tofu on the baking sheet and roast for 35 minutes, flipping halfway through.
  6. In a large bowl, massage the kale with olive oil, lime juice, maple syrup, salt, and pepper until tender.
  7. Assemble the salad by drizzling kale with dressing, then topping with roasted sweet potatoes, tofu, avocado, and red onion.
  8. Finish with toasted sliced almonds and serve immediately.
