Instructions
- Make the marinade by blending the marinade ingredients and coat the pork loin. Refrigerate for 1 hour or overnight.
- Prepare the savory strawberry compote by sautéing shallots, then adding strawberries, wine, sugar, salt, and pepper. Simmer until thickened.
- Preheat the grill and remove the pork loin from the marinade, boiling the excess marinade for basting.
- Grill the pork loin for about 12 minutes, turning and basting every 3 minutes until it reaches 140°F.
- Let the pork rest, then slice and serve topped with the strawberry compote and garnished with fresh strawberries and rosemary.
