Ingredients

The pork

  • 1 lb pork tenderloin

The marinade

  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • tsp salt
  • 1 tsp pepper
  • 1–2 tsp fresh rosemary
  • 4 cloves garlic

The strawberry compote

  • 1 tbsp olive oil
  • 1 small shallot (finely chopped)
  • 2 cups strawberries (small diced)
  • ½ cup white wine
  • 2 tbsp honey or sugar
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tsp lemon juice

Garnish

  • 1 cup diced strawberries
  • 1 optional balsamic reduction or balsamic glaze
  • 1 sprig fresh rosemary

Instructions

  1. Make the marinade by blending the marinade ingredients and coat the pork loin. Refrigerate for 1 hour or overnight.
  2. Prepare the savory strawberry compote by sautéing shallots, then adding strawberries, wine, sugar, salt, and pepper. Simmer until thickened.
  3. Preheat the grill and remove the pork loin from the marinade, boiling the excess marinade for basting.
  4. Grill the pork loin for about 12 minutes, turning and basting every 3 minutes until it reaches 140°F.
  5. Let the pork rest, then slice and serve topped with the strawberry compote and garnished with fresh strawberries and rosemary.
