Sweet Balsamic Glazed Pork

Ingredients

The pork

  • 2 to 3 pounds boneless pork loin or pork sirloin roast
  • 1 teaspoon ground sage or poultry seasoning
  • ½ teaspoon coarse kosher salt
  • ½ teaspoon coarse black pepper
  • 1 clove garlic, finely minced or crushed
  • ½ cup water or chicken broth

The glaze

  • ½ cup brown sugar, light or dark
  • 1 tablespoon cornstarch
  • ¼ cup balsamic vinegar
  • ½ cup water
  • 2 tablespoons soy sauce

Instructions

  1. Combine sage, salt, pepper, and garlic in a small bowl and rub the mixture all over the pork roast.
  2. For the slow cooker, place the pork in the slow cooker with ½ cup of water and cook on low for 6-8 hours.
  3. For the Instant Pot, add the pork and 1 cup of water or broth, secure the lid, and cook on high pressure for 60 minutes. Let the pressure naturally release for 10 minutes before quick releasing the remaining pressure.
  4. Near the end of the cooking time, whisk together all glaze ingredients in a small saucepan and bring to a boil, then reduce heat and simmer until thickened, about 2-3 minutes.
  5. Remove the pork from the cooker, shred it, and drizzle the glaze over the pork before serving.
