Instructions
- Preheat the oven to 350ºF.
- Heat a large sauté pan over medium-high heat and add the cubed pancetta, sautéing until browned for 5-7 minutes.
- In a large bowl, whisk together the eggs and milk, then set aside.
- Spray muffin tins with cooking spray to prevent sticking.
- Distribute the browned pancetta, chopped green onions, and diced sundried tomatoes evenly among the muffin cups.
- Pour the egg mixture into each muffin cup until even.
- Top each cup with crumbled goat cheese.
- Bake for 17 minutes, then remove from the oven and let cool for 5 minutes.
