Ingredients

  • 12 units eggs
  • ½ cup 2% milk
  • 4 oz. cubed pancetta
  • 3 units green onions, chopped
  • 4 oz. crumbled goat cheese
  • cup sundried tomatoes, diced

Instructions

  1. Preheat the oven to 350ºF.
  2. Heat a large sauté pan over medium-high heat and add the cubed pancetta, sautéing until browned for 5-7 minutes.
  3. In a large bowl, whisk together the eggs and milk, then set aside.
  4. Spray muffin tins with cooking spray to prevent sticking.
  5. Distribute the browned pancetta, chopped green onions, and diced sundried tomatoes evenly among the muffin cups.
  6. Pour the egg mixture into each muffin cup until even.
  7. Top each cup with crumbled goat cheese.
  8. Bake for 17 minutes, then remove from the oven and let cool for 5 minutes.
