Mashed Potatoes and Heirloom Carrots

Instructions
- 1. Place potatoes and carrots in a pot, cover with water, and cook over medium heat for about 25-30 minutes until tender but firm.
- 2. Drain the water (reserve it for soup if desired), then add garlic, olive oil, black pepper, sea salt, and ¼ cup plant-based milk.
- 3. Mash the potatoes using an immersion blender, electric mixer, or potato masher until smooth, adding more plant-based milk if needed.
- 4. Stir in fresh basil and serve immediately.
