Mashed Potatoes and Heirloom Carrots

Ingredients

The vegetables

  • 2 large (8 ounces each) potatoes, peeled, quartered
  • 2 large (4 ounces each) heirloom yellow or white carrots, scrubbed, quartered
  • 1 medium heirloom carrot (white or yellow)
  • 1 clove garlic, minced

The seasoning and oil

  • 1 ½ tablespoons extra virgin olive oil
  • ¼ – ½ cup plant-based milk, plain, unsweetened
  • to taste black pepper and sea salt (optional)
  • 2 tablespoons chopped fresh basil

Instructions

  1. 1. Place potatoes and carrots in a pot, cover with water, and cook over medium heat for about 25-30 minutes until tender but firm.
  2. 2. Drain the water (reserve it for soup if desired), then add garlic, olive oil, black pepper, sea salt, and ¼ cup plant-based milk.
  3. 3. Mash the potatoes using an immersion blender, electric mixer, or potato masher until smooth, adding more plant-based milk if needed.
  4. 4. Stir in fresh basil and serve immediately.
