Ingredients

The vegetables

  • 1 pound small potatoes
  • 1 pound carrots

The seasoning

  • 3 tablespoons butter, melted
  • 3 cloves garlic, minced
  • 1 sprig rosemary, finely chopped
  • 2 sprigs fresh thyme, finely chopped
  • 2 teaspoons Italian seasoning
  • to taste salt
  • to taste pepper
  • 1 tablespoon fresh parsley, finely chopped for garnish

Instructions

  1. Preheat the oven to 400°F.
  2. In a large mixing bowl, toss the potatoes and carrots in melted butter until evenly coated.
  3. Add garlic, rosemary, thyme, Italian seasoning, salt, and pepper, and mix well.
  4. Transfer the mixture to a baking sheet and bake for 30 to 40 minutes until tender and crispy.
  5. Sprinkle with parsley and serve hot.
