Ingredients

The vegetables

  • 3 medium potatoes
  • 2 large carrots

The seasoning

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking dish with parchment paper.
  2. Quarter the potatoes and cut the carrots into 2-inch pieces.
  3. In a large mixing bowl, combine the vegetables, drizzle with olive oil, and season with salt and pepper.
  4. Transfer the seasoned vegetables to the lined baking dish and roast for 30-35 minutes, flipping halfway through.
  5. Once cooked, sprinkle with additional salt and freshly chopped parsley before serving.
