One Pot Lemon Artichoke Chicken and Rice

Instructions
- Zest and juice the lemon, reserving some zest for garnish.
- Drain and chop the artichoke hearts, and mince the garlic.
- Cut the chicken into ½-inch pieces.
- Heat olive oil in a skillet or Dutch oven over medium heat.
- Add chicken pieces and sauté for about 2 minutes.
- Add garlic, oregano, red pepper, and salt to the skillet and sauté for another minute.
- Add artichoke hearts, rice, chicken broth, lemon juice, and lemon zest to the skillet.
- Stir briefly, cover, and bring to a boil.
- Reduce heat to low and simmer for 15 minutes without lifting the lid.
- Remove from heat and let it rest for 5 minutes.
- Fluff the rice and redistribute chicken and artichokes.
- Top with feta, additional lemon zest, and parsley if desired, then serve.
