Main Ingredients

  • 1 fresh lemon lemon
  • 1 lb boneless, skinless chicken breasts
  • 2 Tbsp extra virgin olive oil
  • 4 cloves garlic
  • 1 tsp dried oregano
  • ¼ tsp crushed red pepper
  • ¼ tsp salt
  • 1 12 oz jar quartered artichoke hearts
  • 1 cup long grain white rice
  • 1.5 cups chicken broth
  • 1 oz feta cheese crumbles

Optional Garnish

  • 2 Tbsp chopped parsley

Instructions

  1. Zest and juice the lemon, reserving some zest for garnish.
  2. Drain and chop the artichoke hearts, and mince the garlic.
  3. Cut the chicken into ½-inch pieces.
  4. Heat olive oil in a skillet or Dutch oven over medium heat.
  5. Add chicken pieces and sauté for about 2 minutes.
  6. Add garlic, oregano, red pepper, and salt to the skillet and sauté for another minute.
  7. Add artichoke hearts, rice, chicken broth, lemon juice, and lemon zest to the skillet.
  8. Stir briefly, cover, and bring to a boil.
  9. Reduce heat to low and simmer for 15 minutes without lifting the lid.
  10. Remove from heat and let it rest for 5 minutes.
  11. Fluff the rice and redistribute chicken and artichokes.
  12. Top with feta, additional lemon zest, and parsley if desired, then serve.
