One Pot Lemon Garlic Shrimp and Rice

Ingredients

  • 12 oz shrimp (41-60 size)
  • 1 fresh lemon
  • 4 cloves garlic
  • 2 Tbsp butter
  • 1.5 cups long grain white rice
  • 2 cups chicken broth
  • ½ cup water
  • 1 tsp Tony Chachere's seasoning
  • 2 Tbsp chopped parsley

Instructions

  1. Thaw and peel the shrimp if frozen or unpeeled.
  2. Juice half of the lemon and slice the rest for garnish.
  3. Mince the garlic and sauté it with butter in a skillet for 1-2 minutes.
  4. Add the rice and sauté for another 1-2 minutes until it begins to crackle.
  5. Add chicken broth, lemon juice, water, seasoning, and parsley; stir to combine.
  6. Cover the skillet and bring to a boil, then reduce to low and simmer for 10 minutes.
  7. After 10 minutes, scatter the shrimp over the rice, cover, and cook for an additional 5 minutes.
  8. Remove from heat and let it rest for 5 minutes before fluffing the rice and mixing in the shrimp.
  9. Serve hot, garnished with lemon slices and parsley.
