Ingredients

The main ingredients

  • 1 cup white Basmati rice, rinsed well
  • cups vegetable broth
  • 1 8-ounce bag frozen mixed vegetables
  • 1 pound large frozen shrimp, peeled and deveined
  • 1 lemon juiced
  • 2 tablespoons butter or ghee

For cooking

  • as needed spray nonstick cooking spray

Instructions

  1. 1. Spray the Instant Pot liner with cooking spray.
  2. 2. Add the rinsed rice, vegetable broth, and frozen vegetables to the pot.
  3. 3. Place the frozen shrimp on top without stirring.
  4. 4. Lock the lid and set the cook time to 5 minutes.
  5. 5. After cooking, use quick release to remove the lid carefully.
  6. 6. Stir in lemon juice and butter or ghee, then serve hot.
