Instant Pot Shrimp & Rice

Instructions
- 1. Spray the Instant Pot liner with cooking spray.
- 2. Add the rinsed rice, vegetable broth, and frozen vegetables to the pot.
- 3. Place the frozen shrimp on top without stirring.
- 4. Lock the lid and set the cook time to 5 minutes.
- 5. After cooking, use quick release to remove the lid carefully.
- 6. Stir in lemon juice and butter or ghee, then serve hot.
