Instructions
- Preheat the oven to 425°F.
- Peel the butternut squash using a vegetable peeler.
- Cut the squash in half lengthwise and remove the seeds with a spoon.
- Cut the squash into uniform, bite-sized pieces.
- Place the squash on a baking sheet and drizzle with avocado oil, salt, pepper, garlic powder, and curry powder.
- Toss to coat the squash evenly.
- Spread the squash in a single layer on the baking sheet.
- Roast for 25 to 30 minutes, turning once halfway through, until golden brown and fork-tender.
