Ingredients

The squash

  • 1 large butternut squash

The seasoning

  • 1 tablespoon avocado oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon curry powder

Instructions

  1. Preheat the oven to 425°F.
  2. Peel the butternut squash using a vegetable peeler.
  3. Cut the squash in half lengthwise and remove the seeds with a spoon.
  4. Cut the squash into uniform, bite-sized pieces.
  5. Place the squash on a baking sheet and drizzle with avocado oil, salt, pepper, garlic powder, and curry powder.
  6. Toss to coat the squash evenly.
  7. Spread the squash in a single layer on the baking sheet.
  8. Roast for 25 to 30 minutes, turning once halfway through, until golden brown and fork-tender.
