Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a small skillet, toast the panko bread crumbs, sugar, and cinnamon until golden brown.
- In the same skillet, combine brown sugar, water, and a cinnamon stick to make the syrup, then steep for 10 minutes.
- Mix the butter, flour, eggs, cinnamon, vanilla, and salt to create the cinnamon smear.
- Brush the brioche slices with the syrup and smear the cinnamon mixture on each slice.
- Bake the brioche for 15 minutes, then add the cinnamon crunch and pearl sugar before baking for an additional 2-3 minutes.
- Serve on plates.
