Ingredients

Cinnamon Crunch

  • 3 tablespoons panko bread crumbs
  • 1 teaspoon sugar
  • ½ teaspoon ground cinnamon

Brown Sugar Syrup

  • ¼ cup brown sugar
  • ¼ cup water
  • 1 stick cinnamon stick
  • a pinch salt

Cinnamon Smear

  • 1 cup unsalted butter, at room temperature
  • ¼ cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • ¼ cup white granulated sugar
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • a pinch salt
  • 1 loaf brioche, cut into slices
  • 1 tablespoon Swedish pearl sugar (optional)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a small skillet, toast the panko bread crumbs, sugar, and cinnamon until golden brown.
  3. In the same skillet, combine brown sugar, water, and a cinnamon stick to make the syrup, then steep for 10 minutes.
  4. Mix the butter, flour, eggs, cinnamon, vanilla, and salt to create the cinnamon smear.
  5. Brush the brioche slices with the syrup and smear the cinnamon mixture on each slice.
  6. Bake the brioche for 15 minutes, then add the cinnamon crunch and pearl sugar before baking for an additional 2-3 minutes.
  7. Serve on plates.
