Ingredients

The dough

  • ½ cup buttermilk
  • cup water
  • teaspoons instant or active dry yeast
  • ¼ cup granulated sugar
  • 5 tablespoons unsalted butter
  • 1 large egg
  • 1 teaspoon salt
  • 3 cups bread flour

The filling

  • 3 tablespoons unsalted butter
  • cup packed brown sugar
  • teaspoons ground cinnamon

The cinnamon crunch topping

  • 2 tablespoons unsalted butter
  • cup packed brown sugar
  • teaspoons ground cinnamon
  • 2 teaspoons all-purpose flour or bread flour

Instructions

  1. Prepare the dough by mixing warm buttermilk, warm water, yeast, and sugar, then let it sit until foamy.
  2. Add remaining sugar, melted butter, egg, salt, and flour, then mix until it forms a dough.
  3. Knead the dough for about 5 minutes until soft and slightly tacky.
  4. Let the dough rise in a greased bowl for 1.5 to 2 hours until doubled in size.
  5. Punch down the dough and roll it out into a rectangle.
  6. Spread softened butter over the dough, then sprinkle with a mixture of brown sugar and cinnamon.
  7. Roll the dough tightly into a log, cut it in half lengthwise, and twist the halves together.
  8. Place the twisted dough into a greased loaf pan and let it rest for 30 minutes.
  9. Prepare the cinnamon crunch topping by mixing melted butter, brown sugar, cinnamon, and flour.
  10. Spoon the topping over the loaf and bake at 350°F (177°C) for about 45-55 minutes until golden brown.
  11. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
