Honey Lime Tofu Stir Fry

additional oil for cooking the tofu

The sauce

minced garlic

minced fresh ginger

low sodium soy sauce

fresh lime juice

honey

red pepper flakes (optional)

loosely packed mint leaves, chopped
Instructions
- Cook the farro, rice, quinoa, or noodles according to package instructions and set aside.
- Prepare the tofu according to the preferred method for crispy tofu.
- In a small bowl, mix together the sauce ingredients except for the mint.
- Sauté the tofu and then set it aside on a paper towel-lined plate.
- In the same pan, heat the oil and add asparagus and broccoli, cooking until crisp-tender.
- Add the reserved tofu, tomatoes, and green onions, cooking for an additional 2 minutes.
- Stir in the mint and serve over the prepared grain, garnished with extra green onions and sauce if desired.
