Tofu Vegetable Stir Fry

Ingredients

The sauce

  • 1 onion chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • ¼ cup lite soy sauce
  • ¼ cup water
  • 1 tablespoon honey
  • 1 tablespoon orange zest
  • ¼ cup fresh squeezed orange juice
  • 1 tablespoon light brown sugar
  • 1 jalapeno sliced
  • 1 red Thai chili
  • ¼ teaspoon red Thai chili paste
  • to taste pepper
  • 1 tablespoon corn starch

The main ingredients

  • 1 package extra firm tofu
  • to taste vegetables (snow peas, zucchini, yellow and green peppers, eggplant, mushrooms, bean sprouts)
  • to serve rice

Instructions

  1. Sauté garlic and onion in olive oil until tender.
  2. Add soy sauce, water, honey, orange zest, and juice; stir to combine.
  3. Mix in brown sugar, jalapeno, Thai chili, and chili paste; simmer for about five minutes.
  4. Adjust seasoning as needed, adding salt and pepper.
  5. Stir in corn starch mixed with a little water until the sauce thickens.
  6. Marinate tofu in some sauce for at least 15 minutes and grill on a high heat grill pan.
  7. Stir fry the vegetables in a wok with a little oil.
  8. Add the sauce and grilled tofu to the vegetables and stir fry until cooked and tender.
  9. Serve over rice with extra sauce if desired.
