Tofu Vegetable Stir Fry

The main ingredients

vegetables (snow peas, zucchini, yellow and green peppers, eggplant, mushrooms, bean sprouts)

Instructions
- Sauté garlic and onion in olive oil until tender.
- Add soy sauce, water, honey, orange zest, and juice; stir to combine.
- Mix in brown sugar, jalapeno, Thai chili, and chili paste; simmer for about five minutes.
- Adjust seasoning as needed, adding salt and pepper.
- Stir in corn starch mixed with a little water until the sauce thickens.
- Marinate tofu in some sauce for at least 15 minutes and grill on a high heat grill pan.
- Stir fry the vegetables in a wok with a little oil.
- Add the sauce and grilled tofu to the vegetables and stir fry until cooked and tender.
- Serve over rice with extra sauce if desired.
