Green Vegetables and Tofu Stir-fry

Ingredients

The marinade

  • ¼ cup reduced salt soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp hoisin sauce
  • 2 tsp cornstarch
  • 4 tbsp water

The stir-fry

  • 2 tbsp vegetable oil
  • 1 package extra-firm tofu (350 g), sponged and cut into cubes
  • 3 cloves garlic, finely chopped
  • 1 tbsp fresh ginger, finely chopped
  • 1 pinch hot pepper flakes
  • 2 carrots
  • 1 ½ cups snow peas
  • 2 cups asparagus
  • 2 green onions, finely sliced
  • 2 tsp sesame oil

Instructions

  1. Whisk together soy sauce, rice vinegar, hoisin sauce, cornstarch, and 3 tablespoons of water in a bowl and set aside.
  2. Heat half of the vegetable oil in a wok over medium-high heat, add the tofu, and cook for about 5 minutes until golden brown. Reserve on a plate.
  3. In the same wok, add the remaining vegetable oil, garlic, ginger, and hot pepper flakes. Cook for 30 seconds while stirring.
  4. Add snow peas and asparagus to the wok and stir for 1 minute.
  5. Add the remaining water, cover, and simmer for about 3 minutes.
