Green Vegetables and Tofu Stir-fry

The stir-fry

vegetable oil

extra-firm tofu (350 g), sponged and cut into cubes

garlic, finely chopped

fresh ginger, finely chopped

hot pepper flakes

green onions, finely sliced

Instructions
- Whisk together soy sauce, rice vinegar, hoisin sauce, cornstarch, and 3 tablespoons of water in a bowl and set aside.
- Heat half of the vegetable oil in a wok over medium-high heat, add the tofu, and cook for about 5 minutes until golden brown. Reserve on a plate.
- In the same wok, add the remaining vegetable oil, garlic, ginger, and hot pepper flakes. Cook for 30 seconds while stirring.
- Add snow peas and asparagus to the wok and stir for 1 minute.
- Add the remaining water, cover, and simmer for about 3 minutes.
