Asparagus Stir-Fry

Ingredients

The stir-fry base

  • 8 ounces extra-firm tofu
  • 4 pieces green onions
  • 1/2 tablespoon freshly grated ginger
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 bunch asparagus
  • 3 cloves garlic
  • 1 handful toasted cashews
  • 1 handful spinach or chopped kale or chard

The flavorings

  • 1 splash toasted sesame oil
  • 2 tablespoons hoisin sauce
  • 1 lime zest and juice
  • 1 handful fresh mint
  • 1 handful fresh basil
  • a couple big pinches fine-grain sea salt

Instructions

  1. Prep all ingredients and have them ready near the stove.
  2. Heat sesame oil in a large pan or wok over medium-high heat.
  3. Add tofu and cook until golden, then set aside.
  4. In the same pan, add more oil and heat, then add onions, ginger, red pepper flakes, asparagus, and salt. Stir-fry for about a minute.
  5. Add garlic, cashews, and spinach, and stir-fry until spinach wilts.
  6. Return tofu to the pan and stir in lime zest, juice, and hoisin sauce. Cook for another 10-20 seconds while stirring.
  7. Remove from heat and stir in mint and basil. Adjust salt to taste.
