Ingredients

The pasta

  • ½ pound whole grain spaghetti

The filling

  • ½ pound natural turkey or pork Italian sausage
  • 3-4 cups fresh spinach, chopped
  • 4-5 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • ¼ teaspoon crushed red pepper flakes
  • 2 24-ounce jars marinara
  • ½ cup cottage cheese
  • 2 tablespoons basil pesto
  • 2 large eggs
  • ½ teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • 1 cup shredded mozzarella cheese
  • ¼ cup freshly grated Parmesan
  • ¼ cup flat-leaf Italian parsley, chopped (optional)

The oil

  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F.
  2. Boil water in a large pot and cook the spaghetti according to package directions, then drain.
  3. In a Dutch oven, heat olive oil over medium heat, add sausage and sauté until browned.
  4. Add spinach and garlic to the sausage, cooking until spinach wilts.
  5. Stir in Italian seasoning and crushed red pepper, then remove from heat.
  6. In a bowl, whisk together marinara, cottage cheese, pesto, eggs, salt, and pepper.
  7. Combine the marinara mixture with the cooked spaghetti and sausage mixture, spreading it in the casserole dish.
  8. Top with shredded mozzarella and bake for 28-32 minutes until set.
  9. Broil for 2-3 minutes until the cheese is bubbly and browned.
  10. Let sit for 5-10 minutes, cut into wedges, and serve with Parmesan and parsley if desired.
