The oil
Instructions
- Preheat the oven to 350°F.
- Boil water in a large pot and cook the spaghetti according to package directions, then drain.
- In a Dutch oven, heat olive oil over medium heat, add sausage and sauté until browned.
- Add spinach and garlic to the sausage, cooking until spinach wilts.
- Stir in Italian seasoning and crushed red pepper, then remove from heat.
- In a bowl, whisk together marinara, cottage cheese, pesto, eggs, salt, and pepper.
- Combine the marinara mixture with the cooked spaghetti and sausage mixture, spreading it in the casserole dish.
- Top with shredded mozzarella and bake for 28-32 minutes until set.
- Broil for 2-3 minutes until the cheese is bubbly and browned.
- Let sit for 5-10 minutes, cut into wedges, and serve with Parmesan and parsley if desired.
