Beginner Smoked Tri-Tip

Ingredients

The meat

  • 2 lb tri-tip roast

The oil

  • 2 tbsp olive oil

The rub

  • 1 tsp sea salt
  • 1 tsp coconut sugar
  • ½ tsp ground pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp chili powder
  • ½ tsp paprika

Instructions

  1. Preheat the smoker to 225°F.
  2. Mix all rub ingredients in a small bowl.
  3. Trim the tri-tip by removing excess fat and silver skin.
  4. Drizzle olive oil over the tri-tip and coat it evenly.
  5. Generously apply the seasoning rub on both sides of the tri-tip.
  6. Place the tri-tip in the smoker and smoke until it reaches 5°F below the desired final temperature.
  7. Remove the tri-tip from the smoker and let it rest briefly.
  8. Heat oil in a cast iron skillet and sear the tri-tip on all sides for 1-2 minutes each.
  9. Let the tri-tip rest for 10 minutes before slicing against the grain for serving.
