Instructions
- Preheat the smoker to 225°F.
- Mix all rub ingredients in a small bowl.
- Trim the tri-tip by removing excess fat and silver skin.
- Drizzle olive oil over the tri-tip and coat it evenly.
- Generously apply the seasoning rub on both sides of the tri-tip.
- Place the tri-tip in the smoker and smoke until it reaches 5°F below the desired final temperature.
- Remove the tri-tip from the smoker and let it rest briefly.
- Heat oil in a cast iron skillet and sear the tri-tip on all sides for 1-2 minutes each.
- Let the tri-tip rest for 10 minutes before slicing against the grain for serving.
