Ingredients

The meat

  • 2-3 pounds tri tip roast

The rub

  • cup BBQ rub

Instructions

  1. Preheat a smoker to 225 degrees F.
  2. Coat both sides of the tri tip with the BBQ rub.
  3. Insert a thermometer into the thickest part of the meat and place it in the smoker.
  4. Cook the meat for approximately 30 minutes per pound or until a thermometer registers 135 degrees F.
  5. Preheat the oven broiler.
  6. Remove the meat from the smoker and broil for 5-6 minutes until a browned crust develops.
  7. Wrap the tri tip in foil and let it rest for 20 minutes.
  8. Remove the meat from the foil, slice thinly against the grain, and serve.
