Yellow Split Pea Soup

The soup base

The sauté

kale, chopped and steamed

Instructions
- In a medium saucepan, combine split peas, water, bay leaves, and smoked paprika, and bring to a boil.
- Reduce heat and simmer for 1 hour until the peas break apart.
- Remove from heat, discard bay leaves, and puree the peas until smooth.
- In a large saucepan, heat grapeseed oil and sauté the onion until translucent.
- Add garlic and mushrooms, and sauté until tender.
- Stir in the pureed peas, stock, kale, and salt into the onion and mushroom mixture.
- Warm the soup and serve.
