One-Pot Yellow Split Pea Soup

Instructions
- Rinse the yellow split peas and chop the vegetables.
- Heat grapeseed oil in a stockpot over medium heat.
- Add red onion and carrots, cooking until the onion is translucent.
- Stir in garlic, ginger, and mushrooms, cooking until the mushrooms darken.
- Pour in vegetable broth, water, yellow split peas, coriander, and turmeric.
- Bring to a boil, then reduce heat and simmer until peas are tender, about 25 to 60 minutes.
- Optional: Stir in chopped carrot tops during the last 5 minutes of cooking.
- Season with salt and pepper to taste.
- Serve garnished with cilantro, chives, and sunflower seeds if desired.
