Ingredients

The soup

  • 2 tablespoons grapeseed oil
  • 1 cup diced red onion
  • 2 medium carrots, diced
  • 4 cloves garlic, minced
  • 2 inches ginger, grated
  • 2 cups sliced mushrooms
  • 4 cups vegetable broth
  • 2 cups water
  • 2 cups dry yellow split peas, rinsed
  • 1 tablespoon coriander
  • 1 tablespoon turmeric
  • to taste salt and pepper

Optional garnishes

  • to taste cilantro leaves
  • to taste chopped fresh chives
  • to taste sunflower seeds, toasted

Instructions

  1. Rinse the yellow split peas and chop the vegetables.
  2. Heat grapeseed oil in a stockpot over medium heat.
  3. Add red onion and carrots, cooking until the onion is translucent.
  4. Stir in garlic, ginger, and mushrooms, cooking until the mushrooms darken.
  5. Pour in vegetable broth, water, yellow split peas, coriander, and turmeric.
  6. Bring to a boil, then reduce heat and simmer until peas are tender, about 25 to 60 minutes.
  7. Optional: Stir in chopped carrot tops during the last 5 minutes of cooking.
  8. Season with salt and pepper to taste.
  9. Serve garnished with cilantro, chives, and sunflower seeds if desired.
