Split Pea Soup

meaty ham bone or ham shanks

Instructions
- Heat olive oil in a large pot over medium-high heat and sauté onion and celery for 3 minutes.
- Add garlic and sauté for an additional minute.
- Pour in chicken broth and water, then add split peas, bay leaves, and thyme. Season lightly with salt and pepper.
- Nestle the ham bone into the mixture, bring to a boil, then reduce to low heat and cover. Let it simmer for about 1 hour.
- Remove the ham, let it rest for 10 minutes, then shred or dice the meat.
- Add chopped carrots to the soup and continue to simmer for another 30 minutes until the peas have mostly broken down.
- Stir the ham back into the soup, adjust seasoning with more salt if needed, and serve warm garnished with parsley if desired.
