Split Pea Soup

Ingredients

The soup base

  • 1 Tbsp olive oil
  • 1 ½ cups chopped yellow onion
  • 1 ¼ cups chopped celery
  • 1 tsp minced garlic
  • 4 cups unsalted chicken broth
  • 4 cups water
  • 1 16 oz bag dried split peas
  • 2 bay leaves
  • 1 ½ tsp chopped fresh thyme
  • 1 ½ lb meaty ham bone or ham shanks
  • 1 cup chopped carrots

Seasoning

  • to taste salt
  • to taste freshly ground black pepper
  • optional chopped fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat and sauté onion and celery for 3 minutes.
  2. Add garlic and sauté for an additional minute.
  3. Pour in chicken broth and water, then add split peas, bay leaves, and thyme. Season lightly with salt and pepper.
  4. Nestle the ham bone into the mixture, bring to a boil, then reduce to low heat and cover. Let it simmer for about 1 hour.
  5. Remove the ham, let it rest for 10 minutes, then shred or dice the meat.
  6. Add chopped carrots to the soup and continue to simmer for another 30 minutes until the peas have mostly broken down.
  7. Stir the ham back into the soup, adjust seasoning with more salt if needed, and serve warm garnished with parsley if desired.
