Split Pea Soup

Instructions
- Heat olive oil in a large dutch pot over medium heat.
- Add diced ham and cook until golden brown, then remove and set aside.
- Sauté onions, garlic, and celery until the onion is soft and translucent.
- Add carrots, dried peas, potatoes, and stock, bringing to a boil.
- Season with oregano, creole seasoning, cayenne pepper, salt, and black pepper.
- Cover and cook on low, stirring occasionally, until vegetables are soft and desired consistency is reached.
- Return ham to the pot and serve warm.
