Ingredients

  • 2 tablespoons olive or cooking oil
  • 1 ½ pounds diced leftover ham
  • 1 cup chopped onions
  • 1 tablespoon minced garlic
  • 1 stalk celery, diced
  • 1 - 1 ½ cups diced carrots
  • 1 pound dried split green peas
  • 1 cup medium-diced red boiling potatoes
  • 7-8 cups chicken stock or water
  • ½ teaspoon dried oregano
  • 1-2 teaspoons creole seasoning
  • ¼ - ½ teaspoon cayenne pepper
  • to taste salt and pepper

Instructions

  1. Heat olive oil in a large dutch pot over medium heat.
  2. Add diced ham and cook until golden brown, then remove and set aside.
  3. Sauté onions, garlic, and celery until the onion is soft and translucent.
  4. Add carrots, dried peas, potatoes, and stock, bringing to a boil.
  5. Season with oregano, creole seasoning, cayenne pepper, salt, and black pepper.
  6. Cover and cook on low, stirring occasionally, until vegetables are soft and desired consistency is reached.
  7. Return ham to the pot and serve warm.
