Split Pea Soup with Ham

Instructions
- Rinse the split peas in cold water.
- Melt the butter in a large pot over medium heat.
- Add the chopped onion, carrot, and celery; cook until softened for 4-5 minutes.
- Stir in the minced garlic and cook for 1 more minute.
- Add the split peas and cook for another minute.
- Incorporate the ham bone, chicken broth, water, bay leaf, and thyme.
- Increase heat to medium-high and bring to a boil.
- Reduce heat to simmer and cook uncovered for 60-90 minutes, stirring occasionally, until peas are cooked and soup thickens.
- Add the diced ham and cook for an additional 10 minutes.
- Remove the ham bone and bay leaf; season with salt and black pepper to taste.
- Serve with toasted croutons.
