Split Pea Soup with Ham

Ingredients

  • ¼ cup unsalted butter
  • 2 cups chopped onion
  • 1 ½ cups diced carrot
  • 1 cup diced celery
  • to taste none coarse sea salt
  • ½ teaspoon black pepper
  • 1 tablespoon garlic, finely minced
  • 1 lb dried split peas
  • 1 meaty ham bone
  • 2 leaves bay leaf
  • 2 teaspoons fresh thyme leaves
  • 6 cups chicken broth
  • 2 cups water
  • 1 cup diced ham

Instructions

  1. Rinse the split peas in cold water.
  2. Melt the butter in a large pot over medium heat.
  3. Add the chopped onion, carrot, and celery; cook until softened for 4-5 minutes.
  4. Stir in the minced garlic and cook for 1 more minute.
  5. Add the split peas and cook for another minute.
  6. Incorporate the ham bone, chicken broth, water, bay leaf, and thyme.
  7. Increase heat to medium-high and bring to a boil.
  8. Reduce heat to simmer and cook uncovered for 60-90 minutes, stirring occasionally, until peas are cooked and soup thickens.
  9. Add the diced ham and cook for an additional 10 minutes.
  10. Remove the ham bone and bay leaf; season with salt and black pepper to taste.
  11. Serve with toasted croutons.
