Split Pea Soup with Ham

Ingredients

  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 medium onion, minced (~1.25 cups)
  • 2 cups diced carrots
  • 1.5 cups diced celery
  • 8 oz. shiitake mushrooms (~1 heaping cup)
  • 5 cloves garlic, minced
  • 2 cups dried split peas
  • 4 cups vegetable broth
  • 4 cups water
  • 1.5 teaspoons dijon mustard
  • 5 sprigs fresh thyme
  • 1 sprig fresh sage
  • 1 ham bone with meat
  • 4 cups diced ham

Instructions

  1. Heat olive oil in a large pot over medium-high heat and sauté the onion with salt for about 3 minutes.
  2. Add remaining olive oil, carrots, celery, and mushrooms, and sauté for about 4 minutes, then add garlic and sauté for an additional 2 minutes.
  3. Add split peas, broth, water, mustard, and remaining salt to the pot, stir to combine, and submerge the thyme and sage.
  4. Submerge the hambone into the soup and bring to a boil over high heat.
  5. Cover the pot, reduce heat to low, and let the soup simmer for 1 hour, stirring periodically.
  6. Remove the hambone and add diced ham, then simmer for an additional 15 minutes.
  7. Remove the herb bundle, let the soup sit uncovered for 15 minutes to thicken, and serve.
