Split Pea Soup with Ham

Instructions
- Heat olive oil in a large pot over medium-high heat and sauté the onion with salt for about 3 minutes.
- Add remaining olive oil, carrots, celery, and mushrooms, and sauté for about 4 minutes, then add garlic and sauté for an additional 2 minutes.
- Add split peas, broth, water, mustard, and remaining salt to the pot, stir to combine, and submerge the thyme and sage.
- Submerge the hambone into the soup and bring to a boil over high heat.
- Cover the pot, reduce heat to low, and let the soup simmer for 1 hour, stirring periodically.
- Remove the hambone and add diced ham, then simmer for an additional 15 minutes.
- Remove the herb bundle, let the soup sit uncovered for 15 minutes to thicken, and serve.
