Thai Cucumber Salad

Instructions
- 1. Sprinkle salt over the sliced cucumbers in a colander and let them sit for 10 minutes.
- 2. Blot the cucumbers dry with a paper towel.
- 3. In a small bowl, combine rice vinegar and sugar, then microwave for 30 seconds and stir until the sugar is dissolved.
- 4. In a large bowl, combine the cucumbers and red onion, then pour the rice vinegar mixture over them.
- 5. Add cilantro to the mixture and stir until combined.
- 6. Cover and refrigerate for at least 20 minutes, or up to 24 hours.
- 7. Before serving, sprinkle chopped peanuts on top.
