Ingredients

  • 1 lb cucumbers, peeled and thinly sliced
  • 2 teaspoons salt
  • ¼ cup thinly sliced red onion
  • ½ cup rice vinegar
  • ¼ cup sugar
  • ¼ cup chopped fresh cilantro
  • cup chopped peanuts

Instructions

  1. 1. Sprinkle salt over the sliced cucumbers in a colander and let them sit for 10 minutes.
  2. 2. Blot the cucumbers dry with a paper towel.
  3. 3. In a small bowl, combine rice vinegar and sugar, then microwave for 30 seconds and stir until the sugar is dissolved.
  4. 4. In a large bowl, combine the cucumbers and red onion, then pour the rice vinegar mixture over them.
  5. 5. Add cilantro to the mixture and stir until combined.
  6. 6. Cover and refrigerate for at least 20 minutes, or up to 24 hours.
  7. 7. Before serving, sprinkle chopped peanuts on top.
