Quick Chicken Tortellini Soup

Ingredients

  • 2 cups shredded or chopped cooked chicken
  • 1 tablespoon butter
  • ½ large onion, diced
  • 3 large cloves garlic, minced
  • 2 large carrots, peeled and sliced
  • 2 ribs celery, sliced
  • 6 cups chicken broth
  • 9 ounces refrigerated cheese tortellini
  • ¼ heaping teaspoon dried oregano
  • ¼ heaping teaspoon dried basil
  • 1 cup heavy cream
  • to taste salt and pepper

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Cook onions for 3 to 5 minutes until they begin to turn translucent.
  3. Add garlic and cook for 30 seconds to 1 minute until golden.
  4. Add carrots, celery, and chicken broth; bring to a simmer and cook for 20 minutes.
  5. Stir in tortellini, oregano, and basil; cook according to tortellini package instructions until al dente.
  6. Add cooked chicken and heavy cream; season with salt and pepper to taste.
  7. Heat until chicken is warmed through, then serve.
