Ingredients

The soup base

  • 1 each onion, diced
  • 3 medium carrots, peeled, halved and sliced
  • 3 stalks celery, sliced
  • 1 lb boneless skinless chicken breasts
  • 1 teaspoon minced garlic
  • ¾ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 6 cups chicken broth

The pasta

  • 1 9 ounce package cheese tortellini

Optional garnish

  • to taste none chopped fresh parsley

Instructions

  1. Combine the onion, carrots, celery, chicken breasts, garlic, salt, pepper, thyme, parsley, and chicken broth in a slow cooker.
  2. Cook on HIGH for 3-4 hours or LOW for 6-8 hours.
  3. Remove the chicken breasts, shred them, and return to the soup.
  4. Add the tortellini to the slow cooker and cook for an additional 10-15 minutes until heated through.
  5. Serve the soup garnished with parsley if desired.
