Chicken Tortellini Soup

Instructions
- Combine the onion, carrots, celery, chicken breasts, garlic, salt, pepper, thyme, parsley, and chicken broth in a slow cooker.
- Cook on HIGH for 3-4 hours or LOW for 6-8 hours.
- Remove the chicken breasts, shred them, and return to the soup.
- Add the tortellini to the slow cooker and cook for an additional 10-15 minutes until heated through.
- Serve the soup garnished with parsley if desired.
