Chicken Tortellini Soup

Instructions
- Add chicken, onions, carrots, and celery to the slow cooker.
- Pour in chicken broth, thyme, and bay leaf. Cover and cook on HIGH for 4 to 5 hours or LOW for 5 to 6 hours.
- Shred the chicken with two forks and return it to the slow cooker.
- Add tortellini and cook until tender, about 10 to 15 minutes longer.
- Remove bay leaf, season with salt and pepper, and garnish with parsley if desired.
