Instructions
- Preheat the oven to 350℉ and line baking sheets with parchment paper.
- Whisk together flour, baking powder, and salt in a bowl.
- Beat butter and sugar in a stand mixer until fluffy, then add eggs one at a time along with vanilla and peppermint extracts.
- Gradually mix in the dry ingredients until combined. If the dough is too soft, refrigerate for 30-60 minutes.
- Roll dough into uniform balls, coat in sugar, and place on prepared cookie sheets.
- Flatten each ball slightly with a glass and sprinkle with crushed peppermint candies.
- Bake for 10-12 minutes until edges are set but centers are still soft.
- Cool on the baking sheet for 10 minutes before transferring to a wire rack.
