Ingredients

The dough

  • 14 tablespoons unsalted butter
  • 1 ½ cups sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons peppermint extract
  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Toppings

  • ½ cup peppermint candies or candy canes, crushed
  • to taste none chocolate for drizzling, melted (optional)

Instructions

  1. Preheat the oven to 350℉ and line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. Beat butter and sugar in a stand mixer until fluffy, then add eggs one at a time along with vanilla and peppermint extracts.
  4. Gradually mix in the dry ingredients until combined. If the dough is too soft, refrigerate for 30-60 minutes.
  5. Roll dough into uniform balls, coat in sugar, and place on prepared cookie sheets.
  6. Flatten each ball slightly with a glass and sprinkle with crushed peppermint candies.
  7. Bake for 10-12 minutes until edges are set but centers are still soft.
  8. Cool on the baking sheet for 10 minutes before transferring to a wire rack.
