Ingredients

The cookies

  • 3 cups all-purpose flour
  • 3 tablespoons unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups granulated sugar
  • 1 cup butter, softened (2 sticks)
  • 2 large eggs
  • 4 teaspoons red food coloring
  • 2 teaspoons white vinegar
  • 2 teaspoons vanilla extract
  • 1 teaspoon peppermint extract

The frosting

  • 8 ounces cream cheese, softened
  • ½ cup butter, softened (1 stick)
  • 4 cups powdered sugar
  • 1 cup finely crushed peppermints or candy canes

Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a mixer, beat sugar and butter until fluffy, then add eggs one at a time, mixing well.
  4. Mix in red food coloring, vinegar, vanilla extract, and peppermint extract.
  5. Gradually add the flour mixture and mix until combined.
  6. Roll dough into 1 ½-inch balls and place on baking sheets, spaced 2 inches apart.
  7. Bake for 10 to 12 minutes until edges are golden brown, then cool on racks.
  8. For the frosting, beat cream cheese and butter until creamy, then add powdered sugar and mix until smooth.
  9. Frost cooled cookies and sprinkle with crushed peppermint.
