Instructions
- Preheat the oven to 375°F.
- Mix the butter and sugar until combined, then add the egg, vanilla, peppermint, and salt, mixing well.
- Gradually add the cocoa powder and flour, mixing until blended.
- Pack the dough into a cookie press and press onto ungreased cookie sheets, spacing cookies about 1 inch apart.
- Bake for about 10 minutes until firm to the touch.
- Cool on racks and store in an airtight container for up to 5 days or freeze for later.
