Chocolate Peppermint Crunch Cookies

Instructions
- Mix flour, cocoa powder, baking soda, and salt in a medium bowl.
- In a large bowl, beat butter and sugars until creamy, then add eggs and peppermint extract.
- Combine the dry ingredients with the wet ingredients to form a dough.
- Shape the dough into a log, wrap in plastic wrap, and refrigerate for at least 4 hours or overnight.
- Slice the chilled dough into ¼ inch thick rounds and place on a parchment-lined baking sheet.
- Bake at 350°F for 10-12 minutes and let cool.
- Melt white chocolate in the microwave and dip half of each cooled cookie into it, then sprinkle with crushed peppermint.
