Ingredients

The cookie dough

  • 2 cups flour
  • ¾ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup butter (1.5 sticks), softened
  • ½ cup brown sugar
  • ½ cup white sugar
  • 2 large eggs
  • 1 tsp peppermint extract

The toppings

  • 12 oz white chocolate
  • to taste crushed peppermint candy

Instructions

  1. Mix flour, cocoa powder, baking soda, and salt in a medium bowl.
  2. In a large bowl, beat butter and sugars until creamy, then add eggs and peppermint extract.
  3. Combine the dry ingredients with the wet ingredients to form a dough.
  4. Shape the dough into a log, wrap in plastic wrap, and refrigerate for at least 4 hours or overnight.
  5. Slice the chilled dough into ¼ inch thick rounds and place on a parchment-lined baking sheet.
  6. Bake at 350°F for 10-12 minutes and let cool.
  7. Melt white chocolate in the microwave and dip half of each cooled cookie into it, then sprinkle with crushed peppermint.
