Ingredients

The cookie dough

  • 1 tablespoon ground chia seeds
  • 3 tablespoons water
  • ¾ cup creamy raw almond butter
  • ¾ cup coconut sugar
  • ¼ cup cocoa powder
  • ¼ teaspoon fine sea salt
  • ½ teaspoon baking soda
  • ¼ teaspoon peppermint extract
  • 1 teaspoon apple cider vinegar
  • ½ cup dark chocolate chips (optional)

Toppings

  • 1 crushed candy cane (optional)

Instructions

  1. Preheat the oven to 350ºF and prepare a baking sheet.
  2. Mix the ground chia seeds with water to create a chia egg.
  3. Combine almond butter, coconut sugar, cocoa powder, salt, baking soda, peppermint extract, and vinegar with the chia egg.
  4. Stir until the mixture is thick and uniform.
  5. Fold in dark chocolate chips if using.
  6. Drop rounded tablespoonfuls of dough onto the baking sheet and flatten each cookie slightly.
  7. Sprinkle crushed candy cane on top if desired.
  8. Bake for 9 to 12 minutes until the tops look dry.
  9. Cool on the pan for at least 20 minutes before transferring to a wire rack.
  10. Allow cookies to cool completely before serving.
