Instructions
- Preheat the oven to 350ºF and prepare a baking sheet.
- Mix the ground chia seeds with water to create a chia egg.
- Combine almond butter, coconut sugar, cocoa powder, salt, baking soda, peppermint extract, and vinegar with the chia egg.
- Stir until the mixture is thick and uniform.
- Fold in dark chocolate chips if using.
- Drop rounded tablespoonfuls of dough onto the baking sheet and flatten each cookie slightly.
- Sprinkle crushed candy cane on top if desired.
- Bake for 9 to 12 minutes until the tops look dry.
- Cool on the pan for at least 20 minutes before transferring to a wire rack.
- Allow cookies to cool completely before serving.
