Ingredients

The cookie dough

  • 1 ½ cups almond flour
  • 2 tablespoons coconut flour
  • cup coconut oil, melted and cooled
  • cup sugar (or coconut sugar)
  • 1 large egg
  • ¾ teaspoon peppermint extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt

The mix-ins

  • ¾ cup white chocolate chips
  • ½ cup crushed peppermint candy (or candy canes)

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl, mix melted coconut oil, sugar, egg, and peppermint extract until well combined.
  4. Add almond flour, coconut flour, baking soda, and salt to the mixture and stir until a thick dough forms.
  5. Fold in white chocolate chips and crushed peppermint candy.
  6. Use a cookie scoop to form 12-14 cookie balls and place them on the baking sheet.
  7. Press each cookie ball down to about ¼ to ½ inch thick.
  8. Press remaining white chocolate chips on top of each cookie.
  9. Bake for 10-12 minutes, until they look slightly undercooked.
  10. Let cool on a wire rack and enjoy.
