Peppermint White Chocolate Chip Cookies

Instructions
- Preheat the oven to 350°F.
- Line a baking sheet with parchment paper.
- In a medium bowl, mix melted coconut oil, sugar, egg, and peppermint extract until well combined.
- Add almond flour, coconut flour, baking soda, and salt to the mixture and stir until a thick dough forms.
- Fold in white chocolate chips and crushed peppermint candy.
- Use a cookie scoop to form 12-14 cookie balls and place them on the baking sheet.
- Press each cookie ball down to about ¼ to ½ inch thick.
- Press remaining white chocolate chips on top of each cookie.
- Bake for 10-12 minutes, until they look slightly undercooked.
- Let cool on a wire rack and enjoy.
