Instructions
- Preheat the oven to 325°F and line baking sheets with parchment paper.
- Whisk together the flour, baking soda, and salt in a bowl and set aside.
- In a stand mixer, combine melted butter, brown sugar, and granulated sugar.
- Add the egg, egg yolk, and extracts to the mixture and mix until combined.
- Incorporate the flour mixture into the wet ingredients until just combined.
- Fold in the white chocolate chips.
- Scoop the dough onto the lined baking sheets, placing 12 cookies per sheet.
- Bake for 9-11 minutes until the edges are set.
- Allow cookies to cool for about 5 minutes after removing from the oven.
- While still warm, place a peppermint candy on top of each cookie and let cool completely.
- Once the candies are set and cookies are cooled, remove them from the baking sheet.
