Healthy White Chocolate Peppermint Cookies

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, beat together the softened butter and coconut sugar until well combined.
- Add in the eggs, vanilla extract, and peppermint extract, and mix until blended.
- In a small bowl, combine the gluten-free baking flour, baking soda, baking powder, and salt.
- Add the dry ingredients to the wet mixture and stir until completely combined.
- Fold in the crushed candy canes and mini white chocolate chips.
- Using a cookie scoop, form tablespoon-sized balls and place them on the baking sheet.
- Bake for 12 minutes or until the bottoms are golden brown, then let cool.
- Optionally, top with melted white chocolate and more crushed candy canes.
