Ingredients

The cookies

  • ½ cup unsalted butter, softened
  • ½ cup sugar
  • 1 cup gluten free flour
  • ¼ cup dutch processed cocoa powder
  • ¼ teaspoon baking soda
  • teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg

The chocolate coating

  • ½ cup dark chocolate melting wafers
  • ¼ cup crushed peppermint candies

Instructions

  1. Preheat the oven to 375°F.
  2. Cream the butter and sugar together in a stand mixer until smooth.
  3. Mix in the cocoa powder, baking soda, and salt until combined.
  4. Add the egg and vanilla extract, mixing until incorporated.
  5. Gradually add the gluten free flour and mix until a dough forms.
  6. If the dough is too soft, refrigerate it for a short time to firm up.
  7. Scoop the dough into 1-inch balls and place them on parchment-lined baking sheets, spaced 2 inches apart.
  8. Press each ball slightly in the center to flatten it.
  9. Bake for 8 minutes, then let the cookies cool for 5 minutes on the baking sheet.
  10. Melt the chocolate melting wafers in the microwave, stirring every 30 seconds until smooth.
  11. Dip each cookie halfway in the melted chocolate and place on parchment paper.
  12. Sprinkle the chocolate-dipped side with crushed peppermint candies before serving.
