Instructions
- Preheat the oven to 375°F.
- Cream the butter and sugar together in a stand mixer until smooth.
- Mix in the cocoa powder, baking soda, and salt until combined.
- Add the egg and vanilla extract, mixing until incorporated.
- Gradually add the gluten free flour and mix until a dough forms.
- If the dough is too soft, refrigerate it for a short time to firm up.
- Scoop the dough into 1-inch balls and place them on parchment-lined baking sheets, spaced 2 inches apart.
- Press each ball slightly in the center to flatten it.
- Bake for 8 minutes, then let the cookies cool for 5 minutes on the baking sheet.
- Melt the chocolate melting wafers in the microwave, stirring every 30 seconds until smooth.
- Dip each cookie halfway in the melted chocolate and place on parchment paper.
- Sprinkle the chocolate-dipped side with crushed peppermint candies before serving.
