Ingredients

The cookie dough

  • 1 ¼ cups oat flour
  • 6 tablespoons cacao powder
  • 1 cup coconut sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • ½ cup melted butter or coconut oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Optional for rolling

  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350ºF and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the oat flour, cacao powder, coconut sugar, baking soda, and salt. Whisk to break up clumps.
  3. Add the melted butter or coconut oil, egg, and vanilla extract to the dry ingredients and mix until uniform.
  4. Let the dough rest in the bowl for 15 minutes to allow the oat flour to absorb moisture.
  5. Scoop the dough using a 1-ounce cookie scoop and roll into balls. Optionally, roll in powdered sugar for a crinkle effect.
  6. Arrange the cookie balls on the baking sheet, spaced 2 inches apart, and bake for 8 to 10 minutes.
  7. Let the cookies cool on the pan for 10 to 15 minutes before transferring to a wire rack to cool completely.
