Instructions
- Preheat the oven to 350ºF and line a large baking sheet with parchment paper.
- In a large bowl, combine the oat flour, cacao powder, coconut sugar, baking soda, and salt. Whisk to break up clumps.
- Add the melted butter or coconut oil, egg, and vanilla extract to the dry ingredients and mix until uniform.
- Let the dough rest in the bowl for 15 minutes to allow the oat flour to absorb moisture.
- Scoop the dough using a 1-ounce cookie scoop and roll into balls. Optionally, roll in powdered sugar for a crinkle effect.
- Arrange the cookie balls on the baking sheet, spaced 2 inches apart, and bake for 8 to 10 minutes.
- Let the cookies cool on the pan for 10 to 15 minutes before transferring to a wire rack to cool completely.
