Instructions
- Preheat the oven to 350°F and toast the chopped nuts until fragrant.
- Grind a portion of the oats into flour and mix with the other base ingredients until combined.
- Add the nuts, chocolate, cherries, and remaining oats to the mixture and fold until evenly distributed.
- Let the dough sit at room temperature for 1 hour to hydrate.
- Scoop the dough onto baking sheets and flatten slightly, sprinkling with sea salt if desired.
- Bake until the edges are golden brown, then cool on the baking sheets before transferring to wire racks.
