Instructions
- Preheat the oven to 350°F.
- Brown the butter in a saucepan over medium heat until golden brown and aromatic, about 3-5 minutes.
- Remove the browned butter from heat and let it cool completely.
- In a mixing bowl, combine the cooled brown butter with the brown sugar and white sugar, mixing until creamed.
- Add the egg, egg white, and vanilla extract to the mixture and mix until just combined.
- Incorporate the gluten-free flour, baking soda, sea salt, oats, and chocolate until just combined.
- Line a baking sheet with parchment paper and scoop 12-16 cookies onto it, leaving space between each.
- Bake for 8-10 minutes, or 8-9 minutes for softer cookies.
- Remove from the oven, optionally sprinkle with flaky salt, and let cool before serving.
