Ingredients

  • ½ cup butter
  • 2 units eggs
  • ¾ cup coconut sugar
  • 1 tsp vanilla
  • 2 cups almond flour
  • 2 cups rolled oats
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 units chocolate bars, chopped
  • to taste none flaky sea salt for topping

Instructions

  1. Brown the butter in a sauté pan over medium heat for about 5-7 minutes until it turns amber brown.
  2. Pour the brown butter into a dish and let it cool for an hour.
  3. Preheat the oven to 350°F and grease a baking sheet.
  4. In a large bowl, whisk the cooled brown butter and eggs together.
  5. Add coconut sugar and vanilla to the mixture and whisk until combined.
  6. In a medium bowl, mix almond flour, rolled oats, baking soda, and salt.
  7. Combine the dry ingredients with the wet ingredients and stir until well mixed.
  8. Chop the chocolate bars into small chunks and fold them into the dough.
  9. Scoop the dough into balls to form 16 cookies, place them on the baking sheet, and flatten slightly.
  10. Bake for 10 minutes, then drop the tray on the counter three times to flatten the cookies further.
  11. Bake for an additional 3-4 minutes.
  12. Let cool completely and sprinkle with flaky sea salt if desired.
