Ingredients

  • 2 tablespoons ground flax or chia seeds
  • 6 tablespoons water
  • 1 jar creamy almond butter (no salt added)
  • ¾ cup coconut sugar
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 2 teaspoons apple cider vinegar
  • ¾ cup gluten-free rolled oats
  • 1 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350ºF and line a baking sheet with parchment paper.
  2. In a large bowl, mix the ground flax or chia seeds with water and let it rest for 5 minutes.
  3. Add almond butter, coconut sugar, salt, baking soda, and vanilla to the flax mixture, stirring until a thick dough forms.
  4. Stir in the apple cider vinegar, then fold in the oats and chocolate chips.
  5. Scoop heaping tablespoons of dough onto the prepared baking sheet, flattening them slightly.
  6. Bake for 10 to 12 minutes until lightly golden and soft to the touch.
  7. Allow cookies to cool on the pan for at least 10 minutes before transferring to a wire rack.
