Instructions
- Preheat the oven to 350ºF and line a baking sheet with parchment paper.
- In a large bowl, mix the ground flax or chia seeds with water and let it rest for 5 minutes.
- Add almond butter, coconut sugar, salt, baking soda, and vanilla to the flax mixture, stirring until a thick dough forms.
- Stir in the apple cider vinegar, then fold in the oats and chocolate chips.
- Scoop heaping tablespoons of dough onto the prepared baking sheet, flattening them slightly.
- Bake for 10 to 12 minutes until lightly golden and soft to the touch.
- Allow cookies to cool on the pan for at least 10 minutes before transferring to a wire rack.
